Breakfast of Champions – Easy Overnight Oats

As a busy person juggling a full time job, dance training, performance, yoga classes plus a bit of social interaction every now and then, breakfast is often the easiest meal of the day to skip. I love a good sleep in especially in the cooler months when the house is freezing and it’s dark outside! I’m often bringing a yoghurt to work as my first meal of the day at about 9am, and if i get super peckish around 10am I’ll maybe have a piece of fruit to tide me over until lunch. But sometimes you just feel like something a bit warming but not too messy or complicated to start your day – I found a version of this recipe online and tweaked it for my own preferences.

OVERNIGHT OATS – as the name suggests, prep the night before!

You’ll need:

1 cup organic oats

1 cup your choice of milk or dairy-free subsitute (almond milk works well)

3 dried figs, chopped

1 tsp cinnamon

1 tsp nutmeg

1 tbsp maple syrup

1/2 cup macadamia nuts, chopped (or substitute with your choice of nuts)

2 tbsp chia seeds

1 handful frozen blueberries

INSTRUCTIONS:

Add all the dry ingredients into a small bowl. Mix it up, then add the rest of the ingredients except the blueberries. Cover with plastic wrap and leave overnight in the fridge.

The next day, uncover and stir (here you might also want to add some honey or more maple syrup to taste) then microwave for 2 min.

You can then add any fresh fruit or other nuts/almond meal if you like. I like to add fresh fig or frozen blueberries.

This usually makes around 2 serves for me as it’s quite filling. If it is too dry for your liking you can add in some more milk before heating up.

And it’s as easy as that! Now you can enjoy a delicious filling meal that takes literally 5 min to prep & 2 min to heat – put the kettle on in the morning before you start and it’ll be ready before the kettle boils! You can vary any of the spices/nuts/fruits to your liking or what’s in the pantry, the most important part is the 1 cup oats/ 1 cup liquid at the start.
